Sweet Potato Recipe Alternative
Try this healthy cooking recipe to replace the canned sweet potato recipe with marshmallows which is obviously high in sugars. This healthy low fat treat will delight your family for the holidays and become a new tradition. Acorn Squash (or Sweet Potato) Delight 1 large steamed acorn squash (or 2-3 baked sweet potatos) 1-1/2 Tbs Earth Balance Non-Dairy Buttery Spread 1-2 Tbs pure maple syrup 1/2 tsp Spike seasoning or sea salt 1/2 tsp cinnamon 1/2 tsp coriander 1/4 tsp ground nutmeg 2 Tbs dried cranberries 2 Tbs chopped walnuts Cut squash into 4 sections and steam 30-40 minutes. Allow to cool. Remove skin and place squash (or sweet potatoes) in food processor. Add Earth Balance, maple syrup, Spike, cinnamon, coriander, and nutmeg and process until smooth. Transfer to casserole dish. Warm in 350 °F oven for 20-30 minutes. Garnish with chopped walnuts and dried cranberries.
