The traditional holiday green bean casserole recipe is so famous that in the weeks before Thanksgiving, grocery stores line up the processed ingredients by the check out. Don't worry, you can find the mushroom soup and french fried onions in a jiffy. Look at the ingredients of these popular items French fried onions: Partially Hydrogenated Vegetable Oil (Soybean, Cottonseed), Wheat Flour, Onions, Soy Flour, Dextrose, Salt, TBHQ and Citric Acid in Propylene Glycol (to protect flavor).Propylene glycol is used to de-ice the wings of airplanes. Healthy Cooking Recipe Alternative to Green Bean Casserole
Green Bean Recipe with Mushrooms and Roasted Onions
Green Beans with Roasted Onions2-1/4 lb medium red onions (about 5) 1/4 cup olive oil 2 Tbs balsamic vinegar 1 tsp sea salt 1/4 tsp black pepper 1/4 cup water 6-8 medium mushrooms, cut in half 1-1/2 lb green beans, trimmed and cut diagonally into 2-inch pieces. Preheat oven to 450° F. Oil a 13 x 9 inch baking pan. After peeling onions, trim root ends, leaving onions whole. Then quarter onions lengthwise. Put onions in baking pan, then drizzle with oil and vinegar, tossing to coat. Sprinkle with salt & pepper. Roast, uncovered, turning over once and basting with pan juices twice during baking, until deep golden, about 30 minutes. Add water to pan. Add mushrooms and stir. Continue roasting until onions are tender and caramelized, about 20 minutes more. While onions are roasting, cook beans in a 5-6 qt pot of boiling, salted water, uncovered, until crisp-tender, about 5 minutes. Drain beans and add to onions & mushrooms. Mix to mingle the flavors with the green beans.
