Carrot Salad Recipe

Carrot salad is a great source of vitamin A that is easily assailable by the body. Carrots are also an excellent source of other vitamins and minerals as well. Carrots are high in calcium, which helps build bones and teeth. This calcium is in a living, natural form, which can be easily utilized by the body.

This carrot salad recipe is asked for over and over again in our family.

4-5 large carrots, grated in a salad shooter
1 large apple, peeled, cored and grated as above
1/2 cup organic raisins
1/4-1/2 cup chopped pecans or walnuts

Dressing
1/2 cup eggless mayonnaise (like Vegenaise)

Mix mayo with other ingredients. Chill and serve.
(Optional: add a dash of salt)



A Salad Shooter, made by Presto, is a handy kitchen tool for swiftly slicing or shredding vegetables. I've never made my carrot salad recipe without it.
